Grouper al Fungi
6 tbs of olive oil
1 lb Shitake mushrooms cleaned and sliced into strips.
4 cloves of garlic sliced thin
2 tbs of tomato paste
4 - 6 ounce fillet of Grouper
1 1/2 c white wine

Preheat oven to 400. In an ovenproof saute pan( All Clad ). Heat 4tbs of oil and add the mushrooms . Season with S&P. Add the garlic and tomato paste and cook about 3 mins more. All in all about 7 minutes total cook time. Remove this mixture to a bowl and set aside. Season the Grouper and begin searing in the same pan with the 2 tbs of oil. Cook until a golden brown on the first side. Carefully turn the fish and add the mushroom mixture. Add the wine and finish in the oven for about 6 minutes depending on thickness.
