Grilled Italian Seafood Salad
1/2 c. olive oil
2 garlic cloves finely chopped
1 Tbl. chopped flat leaf parsley
1 tsp. chopped marjoram
1 tsp. fresh thyme
1/4 c. fresh lemon juice
1 tsp. salt
1 tsp. pepper
12 oz. shrimp
12 oz. scallops
1 can cannellini beans , drained and rinsed
3 oz. Arugula (Rocket)
2 carrots. peeled and cut into thin strips
1/2 yellow bell pepper

Heat oil in skillet and add garlic and herbs. Sauté for about 30 sec. Cool to room temp and add lemon juice and salt and pepper. Brush scallops and shrimp with 2 Tbl. of dressing and salt and pepper. Skewer shrimp and scallops and grill them for about 2 minutes per side. In large bowl, combine beans, Arugula, carrots, and bell pepper. Toss with dressing and salt and pepper. Add seafood and serve.
