Grilled Eggplant Pockets

1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
3 cloves of garlic crushed

1 large eggplant
1 log of goat cheese
6 slices ham(prosciutto works best)
12 leaves fresh basil

Pre heat the grill to 350. Combine all the marinade ingredients in a bowl. Cut the eggplant lengthwise into 6 pieces.Marinate the eggplant about 20 mins before placing on the grill. Grill eggplant until done about 4 mins a side. Let cool slightly. Lay the eggplant down and smear the goat cheese over the eggplant and then top it with the ham and Basil. Roll up and slice on the bias.
