Ginger Potato Salad
Ingredients
3 large Yukon gold potatoes
1 ½ cup sour cream
¼ cup sugar
½ cup apple cider vinegar
Chopped fresh chives
¼ cup chopped fresh ginger
3 table spoon horseradish
2 tablespoon whole grain mustard
2 tablespoon soy sauce

Instructions
Dice potato boil until just barley cooked in center cool for about 30 minutes Satuee fresh ginger and garlic in sesame oil and allow to cool Combine all remaining ingredients for dressing Add potato and ginger/garlic to mixing bowl and toss
