Ingredients4 Green plantains
4 black plantains
1/2 cup of vegetable oil
Heat the oil in a deep skillet. The difference between the 2 Plaintains is the black one is sweet and the green is higher in starch.Peel the green plaintains and cut about 1 -1/2 inches thick. Place in hot oil till almost golden brown. Remove from oil and flatten(rolling pin or other All Clad pan.) Place back in the oil until golden brown.Season with a pinch as soon as they come out the second time.
The black Plantains - peel them and cut them on the bias(angle) and cook until golden brown.
