Fontina Chickpea Flatbreads
Ingredients1 15 oz. can chickpeas
1 scallion finely chopped
1 Tbl. Extra Virgin Olive Oil plus more for brushing Coarse salt
1 1/2 c. shredded Fontina cheese
4 12 inch round flatbreads such as Naan or pocketless pita
1/4 tsp. cayenne pepper
Heat a grill. In a bowl toss the chickpeas, scallion, and 1 Tbl of olive oil; season with salt. Coarsely mash the peas with a fork. Stir in the cheese. Spread the mixture over the flatbreads leaving a 1 inch border. Brush the grill with oil and working in batches add the breads to the griddle. Cook over high heat until the bottoms are brown, 2 minutes. Cut into wedges and serve either hot or cold.
