Flourless Chocolate Cake
Ingredients4 oz unsalted butter (cut into small pieces)
8 oz unsweet chocolate
5 egg separated
2/3 c sugar
Preheat the oven to 350. Butter and flour a 10 in round cake pan. Combine the butter and the choc in a double boiler over med low heat( the water in the pot should not touch the bottom of the top bowl in your double boiler.) Whisk together the egg yolks and melted chocolate. Using a stand mixer(Kitchen Aid ) beat the egg whites till they are soft peaks. While the mixer is running slowly add the sugar till stiff peaks are achieved. *** Carefully FOLD the chocolate into the beaten egg whites. Pour into the prepared cake pan and bake 1 1/4 hours(check at 1 hour). As the cake cools it will sink and crack thats the way it is great job. Top with your favorite topping and enjoy.
