Flat Creek Farmhouse Cheddar with Raspberry Puree
Ingredients3oz. Flat Creek Farmhouse Cheddar
2 eggs beaten
4oz. Champagne crackers
2oz. raspberries puree
1 Tbl sugar
several mint leaves
Preheat frying oil to 350 degrees Cut cheese into medallion shaped portions In a small bowl submerge cheese in beaten egg wash. Dredge medallions in cracker crumbs. Deep fry for 20 sec. In a blender puree fresh or frozen raspberries and add sugar until mixture is smooth. Drizzle puree on cheese medallion and top with one raspberry and one mint leaf.
