Fish fillets Italiano
2 Tbs olive oil
1 Medium onion sliced very thin
2 cloves Garlic Minced fine
1 can =14.5oz of diced tomatoes.
1/2 cup chopped black olives
1 Tbs fresh parsley
1/2 c dry white wine
1 lb Cod fillets

In a large sauce pan heat the oil over med heat and begin sauteing the onions. After about 3 minutes add the Garlic. Stir in the olives, tomatoes, parsley and wine. Simmer about 5 minutes. Place fillets in the sauce and simmer for about 7 minutes until the fish starts to flake. Serve with some sauce over the top.
