Filet Mignon with Mushroom stuffing
Ingredients
1/2 tsp. salt
1/4 tap. white pepper
2 lbs. filet mignon
1 tsp. Dijon mustard

Stuffing

2 Tbl vegetable oil
1 small onion, diced
4 oz. mushrooms, sliced small
1/4 c. parsley, chopped
2 Tbl chives, chopped
1 Tbl tomato paste
1/4 c. dried bread crumbs
1 tsp. paprika
salt and pepper

Instructions
Preheat the oven to 375º F. Butterfly the tenderloin lengthwise so that it will open flat. Lightly salt and pepper tenderloin on both sides. Spread the inside of the tenderloin with Dijon mustard. To prepare stuffing, heat oil in sauté pan. Add the onions and cook for 2-3 minutes or until the onions become lightly browned. Add the mushrooms and cook for 5-6 minutes or until all of the moisture has been released. Remove the pan from the stove top and stir in the parsley, chives, tomato paste and bread crumbs. Season the mushroom filling with salt, pepper, and paprika. Let cool. Spread the mushroom stuffing on the inside of the tenderloin. Roll up the tenderloin in a jelly roll fashion and tie with butcher's twine. Sear the tied tenderloin on all sides in a hot sauté pan and finish in the oven. Remove the tenderloin from the oven and allow the meat to rest for at least 5 minutes before slicing. See below for cooking temperatures.
