Ingredients
3 filets of cod, or similar fish
1 cup all purpose flour, seasoned with salt and pepper
1 sliced yellow onion
1 cup extra virgin olive oil
6 cloves garlic, sliced
2 carrots, peeled and sliced into discs
2 bay leaves
1 Tbl chopped sage
¾ cup apple cider vinegar
1 Tbl paprika
to taste salt and pepper
1 tsp crushed red peppers

Instructions
Setup Pan with oil to fry fish Pan for marinade Preparation Pan fry cod after dredging lightly in flour Dry on paper towels In separate pan, add oil, onion, garlic, and carrots and sauté over medium heat When onions are translucent, add bay leaves, sage, vinegar. When vinegar has cooked off a bit, add paprika, salt and pepper, and crushed red peppers. Let simmer for 10 minutes. Pour over fish in pan, refrigerate for 24 hours. Serve with warm French bread.
