1 Tbl caul fat (or butter)
1 lb chopped sirloin
5 scallions – chopped with green and white separated
2 Tbl dry oregano
1 Tbl crushed red pepper
1 Tbl cumin
2 Tbl paprika
to taste Salt and pepper
2 roasted red peppers, sliced
10 pitted and sliced green olives
3 hard boiled eggs, sliced
Peanut oil for frying

Setup Fryer or deep pot with peanut oil at 375º Slotted spoon for removal of Empanadas from fryer Preparation Sauté caul fat with sirloin and white scallion slices until slightly browned Add spices and cook until meat is cooked through Add red peppers and green scallion slices Let cool Fill empanada discs with meat, olive slices and egg slices. Fold over disc into half moon shape and press edges closed with fork Fry for 3 minutes and remove with slotted spoon, drain on paper towels
