EggtoberFest '07 Santa Fe Grilled Chicken
4 Large Chicken Leg Quarters
3 tablespoons Chefandthefatman Love Rub
mix 1 tablespoon olive oil
2 cloves garlic, minced
1. . Wash hands. Place all ingredients except chicken in a small bowl; stir until smooth. Place chicken on a large platter. Rub spice mixture evenly over chicken. Wash hands. Let chicken stand 5 to 10 minutes OR cover and refrigerate up to 8 hours. 2. Preheat Big Green Egg to medium (325 degrees F). Place chicken on BGE; cover. Cook 25 to 30 minutes or until done (internal temp 175 degrees F), turning occasionally.
