Dollywood’s Red Velvet Cake
Cake ingredients:
2 1/2 cups cake flour (sifted)
1 1/2 cups sugar
½ cup shortening
1 cup buttermilk
3 tbsp. Cocoa
2 oz red food coloring
2 eggs
1 tbsp vinegar
1 tsp soda
1 tsp vanilla
1 tsp salt
Cream Cheese icing ingredients:
3 cups powdered sugar
8 oz cream cheese (softened)
1 tsp vanilla
4 tbsp butter (softened)

For cake: Preheat oven to 350 degrees Mix and set aside the cocoa and red food coloring. Cream together ½ cup shortening and 1 ½ cup sugar, add the coca and red food coloring. Mix well. Now add the 2 eggs. Mix all ingredients well. Take the mixture and add the buttermilk, salt, flour and vanilla. Mix well, and then add the soda and vinegar. Mix. Pour into cake pans. Place in preheated oven for approximately 30-35 minutes. Cool and add icing. For icing: Cream ingredients together. Spread between layers and over cake covering thoroughly.
