Cranberry Orange Compote
Serves: 8 to 10

1 bag fresh cranberries and water according to recipe on bag for basic cranberry sauce.
1 cup sugar
Zest of 1 Orange
Juice from 1 Orange
Pinch of cinnamon
1 tbs of cornstarch

ChefNote: Zest orange before cutting in half or juicing, you will need the zest from 1 orange. In a saucepan dissolve sugar in water on high. Once sugar is dissolved add cranberries continuing to cook on high until the cranberries begin to pop open (do not overcook, cranberries get bitter if cooked too long). While cranberries are cooking place cornstarch in a small bowl and add the juice of 1 orange, the orange zest, and cinnamon whisking to combine. Once cranberries are cooked reduce heat to medium. Add the cornstarch mixture to the saucepan and stir. Once sauce is thickened, remove from heat let it cool slightly. Place in a glass serving bowl in the refrigerator to set up.
