Crab and Shrimp Ravioli
Ingredients1/2lb fresh shrimp P&D
2 tsp. parsley
2 tsp. basil
2 small cloves of garlic, chopped
white pepper-freshly ground
1/4 cup + Heavy cream
1 large egg white very cold
1/2 lb crab meat
1/4 cup grated Parmesan cheese
1 med shallot chopped fine
1 egg beaten with 1 teaspoon of water
In a cold food processor, process the shrimp, parsley, basil, and pepper. With the motor running, pour in the cream and egg to make a mousse. Transfer to a bowl and fold in the crab, cheese and shallot. Place back in fridge. Make your dough and run thru the pasta sheeter to make a long sheet of pasta. Place a spoonful of the crab mix and make rows. Fold over the sheet and make your cuts into squares. Cut with a crimper and set aside and cover with a damp towel. Get your pasta water to a full rolling boil. Before placing pasta in the water, add salt and a little oil.
