Cold Poached Scallops
1 1/2 lbs sea scallops
blueberry mayo
fresh blueberries
fresh mint
Put the scallops in a pan and cover with salted water. Bring water to a simmer. Cook one minute and remove saucepan from heat and let scallops cool to room temp in own liquid. Make blueberry mayonnaise, drain scallops and put on Plates. Spoon mayonnaise over scallops and garnish with mint and blueberries.

Blueberry Mayonnaise 1 whole egg 2 egg yolks 1 Tbl. Dijon mustard 1/4c. blueberry vinegar salt and pepper 2 c. corn oil or light salad oil +++++++++++++++++++++++++++++==++++++++++++++++ Instructions: Combine all ingredients except oil in food processor for 1 minute. Dribble in the oil. Taste and adjust if necessary.
