Coffee and Pepper Rubbed Rib Roast
Coffee and Pepper Rubbed Rib Roast

1 8lb. standing rib roast
3 large cloves of garlic
3 Tbl. soy sauce
2 Tbl. Dijon mustard
1 Tbl. black pepper
1 Tbl. freshly ground coffee
4 Tbl. olive oil

Using a small knife, make slits at intervals in the meat. Insert slivers of garlic into the slits. In a small bowl whisk together the soy sauce and mustard. Whisk in the coffee and then gradually beat in the olive oil. Spread this mixture all over the roast. Let roast sit at room temperature for at least 1 and up to 2 hours. put meat in a large plastic bag. Heat grill to 450º. Cook the roast for 15 minutes, then reduce heat to 350º. Roast about 1 hour and 30 minutes until meat thermometer reads 115º degrees. Remove from grill and let sit 15 to 20 minutes before carving. Enjoy....
