Chocolate Moulten Cake
Ingredients7 1/2 oz imported bittersweet chocolate Coarsely chopped
11 tablespoons of unsalted butter ( cut into large pieces)
3 lg eggs
3 lg egg yolks
1/4 cup plus 2 Tbs of sugar
5 Tbs All Purpose flour
Pre heat oven to 325 Butter and flour 6 -6 oz Ramekins Place 5 1/2 oz of chocolate and the butter into the top of a double boiler. Stir until melted using a stand mixer beat the 3 egg,3 egg yolk, and sugar until thick and pale about 10 on med high speed Turn off the mixer and add the flour. Slow incorporate the flour into the egg sugar mix to form a batter. Add the chocolate into the batter to create a chocolate batter. Place 1/2 the batter among the 6 dishes filling only half way up. Place a few chocolate pieces on top of the batter and cover with the rest of the batter. Place in oven till center of cakes are almost done but a little jiggly (chef term) about 11-12 minutes ****** Watch the cakes carefully after 10 mins. Remove cakes from oven and cool slightly no more than 5 mins. Run a knife around the edge and invert onto a plate. split with a fork and watch the hot chocolate flow.
