20 Vanilla Wafers, finely crushed
3/4 tsp. red pepper
1/2 tsp. pepper
1 1/3 c. all purpose flour, divided
1/4 c. milk
1 large egg
6 skinned and boned chix breasts cut into 1 1/2 inch pieces
1 c. canola oil
Ranch Dressing

Stir together the first 4 ingredients and 1 c. flour. Stir together milk and egg. Dredge chicken pieces in remaining 1/3c. flour; then dip in egg mixture and dredge in wafer mixture. Pour oil in a large skillet; heat to 375ยบ. Fry chicken in 4 batches 2 to 3 minutes on each side or until done. Drain on paper towels and serve with Ranch Dressing.
