Chef and the Fatman Skinny Fatty (with Love Rub)
Serves: 15

1 1/4 lb Italian sausage (see note)
2 Tb Garlic Minced
2 Tb CnFM Love Rub
2 Tb Parsley freshly chopped
3 Tb Onions minced
2 Tb Sage freshly chopped

remove casings from sausage. Mix all ingredients with the sausage forming the sausage into 2" thick rolls aprox. 5" long. Tightly wrap with plastic wrap and refrigerate, time permitting. Cook fatties indirect on BGE (Big Green Egg) for 40 minutes to 1 1/2 hours checking for an internal temperature of 160 degrees. Remove fatties, rest for 10 minutes and slice as appetizer or snack pre dinner.
