Chef Fred's Smoked Pulled Pork Stew

2 pounds Big Green Egg smoked Pulled Pork
8 medium red potatoes, diced ½ inch
3/4 cup carrots, diced ½ inch
½ cup celery, sliced ½ inch
1 medium turnip diced ½ inch
1 can (14 ½ ounces) diced tomatoes
1 medium Vidalia onion, finely chopped
1 can (14 ½ ounces) vegetable broth
3 tablespoon fresh garlic, minced
3 cups cooked rice

This recipe done on the Big Green Egg- It can be done on a conventional range.

In a cast iron Dutch oven over medium heat, combine all ingredients, except pork. Cover and bring to a boil. Reduce heat and simmer for 1 hour or until red potatoes, turnip and carrots are tender. Add pulled pork and continue simmering for 20 minutes. Serve stew over hot rice.
