Ingredients3 lbs. ground beef
2 lbs. ground pork
3/4 c. Italian bread crumbs
Mozzarella cheese cut in small cubes
salt and pepper
Mix the meat and the bread crumbs. Add salt and pepper. Form meat into meatballs and then press a cube of cheese in the middle of the meatball and reform the meatball around the cheese. Grill on the Big Green Egg. ChefNote: Sometimes I roll the finished meatball in an egg wash, and then back in some bread crumbs. Let the meatballs sit in the refrigerator for an hour before you Grill them at 350º on the Big Green Egg using the Ceramic "D" shaped indirect grill top.
