Cheddar Cheese Soup
Cheddar Cheese Soup
4 tbs butter
1 lg onion
1/3 cup of red and green bell pepper
4 cloves of garlic
1/2 cup of flour
2cups of chicken stock
1 1/2 pint whole milk
1 1/2 pint cream
12oz sharp cheddar cheese crumbled bacon(for garnish)

In a large heavy saucepan melt the butter over med heat. Add the onion and peppers and saute till soft. Add garlic and saute for 1 min. Add flour and cook for about 1 min stirring constantly. Slowly whisk into the stock,milk and heavy cream. Bring soup to a low boil and reduce the heat and stir until the soup thickens. Add the grated cheese 1/2 cup at a time stirring constantly. DO NOT ALLOW SOUP TO BOIL. Garnish with bacon and serve
