Canapé of Maytag Bleu Cheese &  Roasted Walnuts with Caramelized Onions
Ingredients
1 lb. Maytag Bleu Cheese crumbled
1 c. toasted walnut pieces
1/4 c. heavy cream
salt
freshly gr. pepper
2 Tbl olive oil
1 c. thinly sliced onions
1 c. julienned Granny Smith apples
rice wine vinegar to taste
24 rounds of baguette bread toasted

Instructions
In a food processor, combine the cheese, walnuts, cream. Puree until smooth. Season with salt and pepper. In a small sauté pan, over med. heat, add the oil. When the oil is hot add the onions and the apples. Season with salt and pepper. Sauté until caramelized about 6 to 8 minutes. Remove from heat and stir in vinegar to taste and cool completely. spread a heaping spoonful of the cheese mixture over each toasted round of bread. Garnish with a small amt. of the apple-onion mixture.
