Calamari Salad
1 1/2 lb cleaned squid tubes
2 tbs fresh lemon juice
1tbs red wine vinegar
1/3 c EV (extra virgin) olive oil
1 small red onion sliced very thin
1/3 cup favorite olives
2 cups grape tomatoes
2 celery ribs
1 cup flat leaf parsley packed loosely

Cut squid into rings. Cook squid in boiling salted water. About 45-60 seconds. Place in a water bath to stop the cooking process. When the squid is cool pat dry. Mix all other ingredients together. Place squid in with all ingredients and place in fridge for 1 hour, covered of course.
