CaFM Potato Latkes
CaFM Potato Latkes
9 md Potatoes
2 md Onions
3 md Eggs
3 tb Matzo meal (may take 4tbs)
1 ts Salt or more to taste
1/8 ts Pepper or more to taste
1/2 ts Baking Powder
Vegetable or Peanut oil

Wash, peel and grate potatoes. I like the old hand box grater for this. Place grated potatoes in a colander and let stand for 10+ minutes, then press out remaining liquid. Legend has it the dark liquid that comes out of the potatoes is a blend of starch and a little blood from the hand grating process. Coarsely chop the onion or grate it on the box grater, mix with the eggs in a blender along with salt, pepper, matzo meal and baking powder. You should have a fairly smooth mixture. Add to potatoes and combine Heat 1/4 inch of oil in a large frypan, add mixture by the tablespoon, fry on each side until golden, drain on paper towels. Serve warm with sour cream, or apple sauce or both MwS.
