CaFM Blue Cheese Stuffed Latkes drizzled with Fig Preserves
Ingredients
1 lb Russet potatoes
1/2 c Yellow onion chop fine
1 lg Egg, lightly beaten
1/2 ts Salt
Large blue cheese crumbles
1 ts Fig Preserves
1/4 c Vegetable Oil

Instructions
Peel and shred the potato on a box grater into a bowl of cold water to keep the potatoes from browning. Drain potatoes into a cheesecloth or thin towel and squeeze out as much liquid as possible. Mix first four ingredients together in a mixing bowl. Portion into medium size meatball shape and stuff a large blue cheese crumble into the center of each portion. Flatten the top and bottom of the meatball. Saute top and bottom of each latkes. Place on a serving platter and drizzle with fig preserves. MwS
