CaFM Autumn Latkes with Spiced Apple Compote
5 md Yukon Gold Potatoes
1 lg Sweet Potato
3 c Wild Rice cooked
3 lg Eggs
1 tb Sage, fresh chop very fine
1/2 c Parmesan cheese, grated
1 c Scallions, sliced thinly
Salt and Pepper to taste
1 1/2 c All Purpose Flour
Extra Virgin Olive Oil

6 md Granny Smith Apples
2 tb Unsalted butter
2 tb Granulated Sugar
1/4 ts Ground Clove
1/4 ts Ground Ginger
1 tb Fresh Lemon Juice

Peel all potatoes, julienne lengthwise on a mandolin (or grate on a box grater) Combine first 8 ingredients in a large mixing bowl. Let mixture sit at room temperature for approx. 15 minutes. Drain any excess liquid form potato mixture Add flour until mixture becomes sticky (adjust flour measurements as necessary). Preheat 10 inch nonstick skillet over medium heat. Add approx. 2 tb oil to pan then 2-3 cups of mixture until pan is covered with a 1/2 inch layer. Pat down the latke mixture until a flat cake is formed. Cook on medium heat for about 3-4 minutes per side. Note: It may be necessary to add additional oil when latke is turned over. -------------------------------Apple Compote------------------------ Peel, core and dice apples store in lemon juice. Melt butter in a large sauté pan, add all remaining ingredients. Simmer on low heat until apples are tender. MwS
