Buffalo Crab Stuffed Chicken Drumettes with Bleu Cheese Tartar Sauce
Ingredients
Serves: 3

6 Large Chicken Drummetes
4 oz Blue Lump Crab
½ cup Panko Bread Crumbs
1 Tbls Cayenne Pepper Sauce
Juice of ½ Lemon
1 egg yolk
1 tsp Yellow Mustard
1 tsp Mayonnaise
Seasoned Salt
Lemon Pepper
Garlic Powder

Instructions
Cut the skin off the bottom of the drummettes and peel away using a sharp paring knife. Gently scrap your knife against the bone sliding the meat towards the top or fat part of the drummette. This will create a pocket for which to stuff your crab mixture into. For the mix simply mix all the other ingredients into a bowl. Stuff this mix into the pocket and pull the meat over leaving a small amount of bone exposed. Deep Fry these in 375 degree oil for about 3 minutes until golden brown. Place them on a sheet pan and sprinkle them with lemon Pepper. Bake at 350 degrees for about 12 minutes until cooked through. --- Bleu Cheese Tartar Sauce is a seperate recipe.
