Blue cheese and Brie Quesadillas with Pear and brown sugar compote
Ingredients
1 TbsĀ  butter
1/4 c brown sugar
1/4 tsp cinnamon
2 whole pears (Bosc) cored finely diced (not minced)
1/4 lb walnuts
1/2 lb Brie
1/2 lb Maytag Blue cheese
FlourĀ Tortillas

Instructions
In a large sauce pan melt the butter and add the sugar and cinnamon. Add the diced pears and walnuts cooking it on med low. Cook this for about 4 minutes. Remove a Tortilla from the pack and lay on a flat surface and add a little of both cheeses. Fold over and press firmly. In a med sauce pan add a little oil and begin cooking the Quesadilla. Cook till golden brown then turn. Remove when done and cut into 4 pieces. Carefully ladle the pear compote over the top and enjoy.
