Black Pepper Crusted Filet with Toasted Goat Cheese
4 filet mignon steaks, each 1 1/2 inches thick
1 Tbl cumin
2 Tbl Kosher salt
2 Tbl ground black pepper
4(3/4 inch) slices goat cheese
chopped cilantro for garnish
Preheat grill to high. Remove steaks from fridge and let sit for 20 minutes before grilling. Combine the cumin, salt, and pepper in small bowl. Season both sides of each fillet with the spice mixture. Grill the filets for 3 to 4 minutes on each fir med. rare. +++++++++++++++++++++++++++++==++++++++++++++++ Preheat the broiler. Remove steaks from grill onto a baking sheet and top each with a slice of cheese. Place under broiler until cheese is golden brown and soft. Garnish with cilantro.
