Aepfelkratzet (Apple Scramble)
Serves: 4 servings
2 cups plus 3 1/2 Tbsp Flour (250 g)
3 To 4 eggs
1 1/2 cups plus 1 1/2 Tbsp Milk (3/8 l)
1 ds Salt
Sugar to taste
3 Apples, peeled, cored, and diced
7 Tbsp Butter (100 g)
Powdered Sugar for dusting
Combine the flour, eggs, milk, a bit of sugar and salt. Stir into a smooth dough. In a skillet, melt the butter and lightly saute the apples. Pour the dough over the apples. Constantly stirring the whole with an egg turner, cook until the 'Kratzet' has browned all around. Dust with sugar, and serve.
This is a German recipe from the Allgaeu area. Be careful to barely brown the apples before adding the fairly thick batter. I do this in a 10" skillet in 3 or 4 batches.
