Pineapple Upside-Down Cake
Pineapple Upside-Down Cake
Serves: 8

1 1/2 c of flour
2 tsp baking powder
1/4 tsp salt
3/4 stick of butter
1 cup of sugar
2 lg eggs
1 tsp of vanilla(pure)
Pineapple rings
cherries (any type but Maraschino is a classic)
1/4 cup of brown sugar
*** A well seasoned cast iron skillet ****

Instructions: Preheat BGE to 350 degrees. Sift the powder,flour and salt together. Add the eggs,butter and sugar into a large bowl and beat till well incorporated . Add the rest of the ingredients until just blended. In the bottom of the cast iron skillet add the sugar and top that with the pineapple rings. In the middle of the rings add the cherries. Pour the batter over the pineapple and place into the BGE. Bake about 45 mins. The cake is done when a tooth pick is inserted and comes out clean. Let the cake sit for about 5 minutes. Invert a plate on top of the skillet and then invert the pan so now the plate is on the bottom. Enjoy!
