Skirt Steak Napoleon with Spicy Mango Salsa
Prepare Chipotle Cream day prior
Marinade New York Strip filets at least 2 hours prior to preparation
Prepare salsa and set aside
Prepare potato pancakes and allow them to cool slightly before assembling
Grill steaks and assemble after resting
Chipotle Cream
1 cup Sour Cream
2 Chipotle peppers with adobo sauce
Marinade (Chimichurri)
1 cup chopped flat leaf parsley
4 cloves garlic
1 tsp salt
½ tsp freshly ground peppercorn
½ tsp red chili flakes
2 juiced lemons
¾ cup extra virgin olive oil
3 Large plum tomatoes, diced
1 sweet onion – medium, diced
1 diced mango
½ cup olive oil
½ cup balsamic vinegar
½ cup mango juice
½ cup chopped cilantro
1 tsp salt
2 finely chopped small jalapenos
Potato Pancakes
3 ½ cups shredded potatoes
2 eggs
1 tsp salt
2 Tbs corn meal
½ tsp pepper
2 ½ lb Trimmed New York Strip Steaks

Preparation Prepare chipotle cream the day prior by mixing ingredients and blending with stick blender Prepare marinade day prior. Marinade New York Strip two hours and up to 12 hours prior. Mix all ingredients for salsa and set aside. Mix all ingredients for potato pancakes. Heat vegetable oil in skillet to medium high heat. Using a 3” ring mold placed in skillet, spoon potato pancake mixture ½ inch thick into mold. Press mixture into mold as tight as possible and remove mold. Repeat, making 2-3 pancakes at a time in the skillet. Cook pancakes 3-4 minutes per side, or until golden brown and well cooked through. Place on cooling rack and repeat until all pancakes are completed. Keep pancakes covered on cooling rack with towel while completing step. Remove New York strips from marinade and grill. 3-4 minutes per side on high heat should suffice, as you want the steaks to turn out medium rare. Remove meat and allow to rest at least 5 minutes prior to assembly. Assembly Take 1 tsp of chipotle cream and place on center of plate. Place 1 potato pancake over chipotle cream. Slice New York Steak on the bias into ¼” strips. Place 3 to 4 slices on pancake and cover with 1 Tbs salsa. Cover strips with one more potato pancake, slices of steak, salsa, and top with chipotle cream.
