Ingredients1 lb dry pasta
2 tablespoons olive oil
6 oz pancetta diced
4 cloves of Garlic(finely chopped)
2 large eggs
1 cup fresh grated Parmesan cheese
Prepare this sauce as you cook the pasta. Heat the oil in a deep skillet over med heat. Add the pancetta and saute for 3 mins till crispy.Toss in the garlic and cook about 30 seconds. Add the drained pasta to the pan and toss. Beat the eggs and cheese together in a mixing bowl. Remove pan from heat and add the egg mixture into the pasta. Toss quickly to keep the eggs from scrambling. Thin the sauce a little if needed with the pasta water.
